At Monopole, wine dictates everything. Premium selections are also made throughout the interiors: from the P35,000 hand-blown crystal glasses and the bar stools from Frederica in Denmark to the overhead lamps from UK-based brand Tom Dixon.
“The wine must come first,” explained Jojo Madrid, owner of the intimate wine bar that only seats 17 guests at a time. Everything is chosen with premium taste, in line with expensive and rare wines they serve.
“A lot of people might not understand what we’re doing here and why we’re pricing this much,” Jojo further elaborates. He , however, has his reasons to enlighten a willing and, well, thirsty market. “People used to regard champagne as something you’d only open during an anniversary or even a wedding; I drink champagne every day.”
