A Hearty, Filling Soup for Impending Rain

Before I left for Sydney, I asked our long time cook Nisa to teach me how to make some of the dishes I grew up with. One of them being her Monggo soup, which I believe is the best version on the planet. I was surprised to discover that her recipe required so few ingredients. But don’t be fooled, it still requires an amount of effort and a bit of love.

Here is the recipe below:

Ingredients

2 large onions
1 head of garlic
1 Knorr Seasoning Cube
1 cup of monggo
2 to 3 cups of water
Salt and pepper to taste

Preparation

1. Sauté the onions and garlic in a bit of oil or butter till they become soft and translucent.

2. Put them into a big pot and throw in your water and monggo. Bring to a boil then lower heat and stir constantly for 1-2 hours, until monggo becomes creamy in consistency. Feel free to add add a little bit more water to get the right texture.

3. Monggo is such a hearty bean and rightfully so. It prevents heart disease, can potentially reduce cancers, and contains all the essential carbs and protein that you need.
