Last week, model and co-owner of Healthy Shots Manila Chelsea Robato showed you how to make a cold-pressed juice with just three ingredients. Today, she’s sharing a low-carb, heart-healthy pancake recipe that happens to be a favorite of hers and her boyfriend, fellow model Christian Busby (they met at a shoot!).
Like her cold-pressed juice recipe, this one’s pretty simple and easy to make, too. This recipe makes two pancakes. How you want to embellish them is totally up to you.
Ingredients
1 large, ripe banana
2 eggs
A dash of cinnamon
Coconut oil
Honey
Preparation
1. Unpeel your banana and mash it in a bowl. Once its mushy enough, crack both eggs open and mix in with your banana.
2. Once both ingredients are fully mixed together, turn on your over, and coat your pan with coconut oil.
3. Pour your first batch onto the pan. Once cooked, one side should have the same texture as an omelet. When ready, flip to cook the other side. Pour your second batch and repeat.
4. Set pancakes on a plate and drizzle with honey. If you want, you can serve with fruits or some raw cacao nibs.
